Under-utilized legume protein rich foods
Protein consumption is essential for the human body, however, people are not getting sufficient protein, due to various reasons. As per RDA recommendation (NIN-ICAR, 2011), adult human’s protein requirement is 1g/1 kg body weight per day, i.e. a 60 kg weighing adult Indian male needs to consume 60 g of protein per day, which is not getting fulfilled, resulting in protein deficiency. Presently only a few sources of proteins are available, which includes soybean, whey and pea, out of which soy was found to be the most popular protein source. There are several under-utilized legumes, containing good quality protein. Plant-based proteins have a huge market since people are becoming more health-conscious and preferring animal-free protein sources, as a part of their diet. Protein can be extracted from those legume sources and used for fortification of foods for the development of protein-rich food products.
